Let's Eat!

Ah, the week that is the madness of back to school after Thanksgiving break, working some extra hours, and the dreaded start of Elf on the Shelf!  Here is what we are serving up to eat amongst the chaos!

Elf on the Shelf...HE'S BAAACCCKK!!!!

It's that dreaded time of the year again. That's right, Hank the Elf is due to return in two short days.  Now I need to confess, this expectation was set by myself.  As my sister AKA Aunt Boo told me, once you go big, you gotta keep up! And of course I always start out with grand plans and appear to be all organized.  Appear being the key word.  I mean it is damn near midnight and I am just getting this post ready!

Each year Hank arrives in a box full of goodies for the season and a welcome letter (HERE) Last year I scored Elf on the Shelf pajamas, chapstick, and band-aids at Target.  This year I scored matching Elf on the Self pajamas for her and her American Girl doll at Kohls, the same chapstick and band-aids at Target, and from the Dollar Store I found an activity set and pencils.  Oh and Hank will look all dapper in his new outfit that she will be able to dress him up in...if she will break the "Don't Touch the Elf" rule for just one time.  On second thought, it better come with a waiver!

So each day he moves and is on some sort of an adventure.  Miss O doesn't think he should be naughty since he reports directly to Santa.  God Bless my peace keeper.  I told her Santa gives him a hall pass to go wild!  Who wants a boring elf anyways?!!  OK, by Day 6 I am ready Passive Hank!

Brussels Sprouts with Pancetta

I made these simple and delicious brussels sprouts last night to go along with steak and some Stick O' Butter Rice.  My in-loves watch Miss O after school on Tuesdays and Thursdays after school.  This allows me to work part time.  After homework, trips to the park, and playing whatever Miss O tells them to do, the least I can do is provide them a decent meal.  JoJo loves brussels sprouts so I try to make them when I can.  With just 4 ingredients, you have a tasty side dish on your table in a matter of minutes!

I usually buy a bag of sprouts at the store weighing in at about 2 pounds.  Aren't they so pretty!  I wash, remove the outer leaves, and cut off stems.  Carefully (if you know me, the italicized makes sense) shred the spouts.

Saute pancetta, add garlic, oil, sprouts, season with salt & pepper and Voila!

Our Tuesday night dinner dates...there's a whole lotta love there!

Holiday Specs 3D glasses review

Of all the things I have gotten to review, these are by far my favorite things.  As a matter of fact, I wish I could be like Oprah and EVERYONE GETS A PAIR!!!  Even the Mr. and PawPaw were totally into them.  The Mr. taught Liv that if you shake your head side to side, the snowflakes and snowmen dance!  The Mr refuses to put up the Christmas Tree (I need his lifting skills) so until then, we are using the plug-in lights we have.  I can't wait to see what the glasses do when the tree is lit!

Oh you know.  Just feeding my baby and checking out the lights!

How cool is this?!?!  I do believe these will be the only snowmen I will build this winter.

You can get these glasses at Hobby Lobby.  They would make awesome stocking stuffers or St. Nick gifts.  Or then again, just because gifts!

Young Leaf Organic Detox Tea

I was given the Young Living Organic Detox Tea to review for an unbiased opinion.  This tea. made with all natural ingredients, is a light and refreshing drink.  Unlike many detox drinks, you won't be running to the bathroom all day.  And the 2:00 slump-The one that makes you contemplating napping on a park bench-it goes away.  The only downfall may be the price.  So I shall enjoy what I have while I can!

Cuban Style Beans and Rice

This dish hits it all-Healthy, fresh, and flavorful.  This was a side dish for some Kahlua pork, but seeing I don't touch that meat with a 10 ft. pole, I had it as main dish.  It was filling and worked out just fine.  It left plenty of room for Miss O's leftover Halloween candy that I may, or may not have eaten.

Like 90% of the recipes used in the LBH, this came from Skinnytaste.  I love Gina's recipes with fresh ingredients that result in robust flavors.  She has all the nutritional values ready to go if you are trying to watch what you eat.  While I don't necessarily count any points, I do know that if I am making one of Gina's recipes, it is on the healthier side.  You wont have any trouble finding a meal to suit your needs.  This girl gives us EVERYTHING!  Breakfast, appetizers, lunch, dinner, and yes even desserts.  I have yet to find a recipe I don't like!
